Com o objetivo de avaliar a influência da composição química do substrato no cultivo do cogumelo comestível Pleurotus florida, seis resíduos agrícolas foram testados: palha de arroz, palha de feijão, palha de trigo, folha de bananeira, palha de sorgo e sabugo de milho. O substrato palha de feijão apresentou resultados semelhantes para a produção (189,8 g kg-1), eficiência biológica (89,2%) e número de cogumelos (12) à palha de arroz, substrato utilizado tradicionalmente no cultivo de Pleurotus em escala comercial. Não foi possível atribuir apenas a um fator químico as altas produções e eficiências biológicas observadas em palha de arroz e palha de feijão e muito menos para a baixa produção em palha de sorgo (77,8 g kg-1) e sabugo de milho (53,2 g g-1). No geral, substratos com relação C/N em torno de 45 (N = 1,0%), maior conteúdo de cinzas, acrescido de altos teores de P, K, Ca, Mg and Mn foram os melhores para o cultivo de P. florida.

The purpose of this work was to evaluate the influence of the chemical composition of the substrate in the cultivation of the edible mushroom Pleurotus florida. Six agricultural by-products were tested: rice straw, bean straw, wheat straw, banana leaf, sorghum straw and maize cobs. Using bean straw as the substrate showed similar results for yield (189.8 g kg-1), biological efficiency (89.2%) and number of mushrooms (12) as rice straw substrates traditionally used for the cultivation of Pleurotus on a commercial scale. It was not possible to attribute the high yields and biological efficiency observed in rice and bean straw solely to chemical factors and, even less so for the low yields presented by sorghum straw (77.8 g kg-1) and maize cobs (53.2 g kg-1). In general, substrates with C/N ratio around 45 (N = 1.0%), high ash content and high levels of P, K, Ca, Mg and Mn were the best for the cultivation of P. florida.

A pesquisa foi realizada nos municípios de Dracena, Junqueirópolis, Mirandópolis, Alianças, Ilha Solteira, Castilho, Araçatuba, Birigui e Guararapes, Estado de São Paulo, aplicando-se um questionário para 17 produtores. As informações sobre as etapas do cultivo de Shiitake em toros, catalogando e caracterizando os produtores e o cultivo, foram tabuladas no software Microsoft Excel for Windows. Os resultados evidenciaram que o cultivo de Shiitake, nesta região, é recente, está em franca expansão e os produtores possuem alto grau de escolaridade. O cultivo está localizado principalmente na zona rural e é realizado tanto por brasileiros descendentes de japoneses como por brasileiros nativos. O eucalipto e a mangueira são as árvores mais utilizadas. A alta ocorrência de contaminação nos toros pode ser por causa do cultivo realizado em ambientes sem controle de temperatura e umidade relativa e à ausência de um manejo adequado. A região contava, em 2004, com 45 mil toros inoculados e uma produtividade média de 200 g cogumelo fresco/toro. Os cogumelos embalados em bandejas de 200 g são vendidos principalmente para o Ceasa em feiras livres.

This study was carried out in the towns of Dracena, Junqueirópolis, Mirandópolis, Alianças, Ilha Solteira, Castilho, Araçatuba, Birigui and Guararapes, São Paulo State, by surveying 17 Shiitake growers through a questionnaire. Data pertaining to the stages of log-Shiitake growing, recording and characterization of growers and growing systems were entered into Microsoft Excel for Windows. The results showed that Shiitake cultivation is recent and increasing in this region, and that growers have a high education level. Shiitake cultivation is mainly located in rural areas, with both Brazilians of Japanese descent and native Brazilians growing it. The most commonly used trees are eucalyptus and mango. The high level of log contamination is perhaps due to growing without temperature or moisture control and to the inappropriate growing system. In 2004, there were 45,000 Shiitake-inoculated logs in this region, and the yield stood around 200 g of fresh mushroom/log. The mushrooms are packed in boxes of 200 g, and are sold mainly to Ceasa in open markets.

O interesse nacional pelo cultivo comercial de shiitake é crescente, devido às suas propriedades nutricionais e medicinais, e ao seu apreciável sabor. O cultivo deste cogumelo constitui uma alternativa rentável de diversificação das atividades de uma propriedade agrícola. Este trabalho teve como objetivo determinar, no Estado de São Paulo, a viabilidade econômica do cultivo de shiitake considerando-se um ciclo de 14 meses, em 1000, 2000, 3000 e 4000 toros de eucalipto. As escalas de produção de 2000 e 4000 toras apresentaram os menores custos de produção kg-1 de shiitake fresco, cerca de R$6,50 e os melhores índices de lucratividade, aproximadamente 34%. A análise de viabilidade econômica mostrou resultados favoráveis para as três maiores escalas de produção, sendo os melhores resultados obtidos para 2000 toros (29,77%) e 4000 (33,43%).

National interest in shiitake commercial cultivation is growing, due to their nutritional and medicinal properties, and appreciable taste. The cultivation of this mushroom is a profitable alternative for activity diversification in an agricultural property. With the aim of determining, in the State of São Paulo, Brazil, the economic viability of the shiitake cultivation considering a cycle of 14 months, this experiment was carried out using 1,000, 2,000, 3,000 and 4,000 eucalyptus trunks. The production scales of 2,000 and 4,000 trunks presented the smallest production costs per kg of the fresh mushroom, around US$3.25 and the highest profitability, approximately 34%. The economic viability analysis was proven favorable for the three greatest scales, with the best results for 2,000 trunks (29.77%) and 4,000 (33.43%).
